Here's my opinion on the matter:
"I can't agree with you anymore" means something like "I used to agree with you, but now I don't"... or "I no longer agree with you." The reason is that "anymore" means "any longer; presently."
You could, maybe, say "I can't agree with you any more" (2 word: any and more)... and this might be emphatic, but it's not exactly a complete sentence. It would imply "I can't agree with you any more than I do already." Or something like that!
The best option is your original Number 2: "I can't agree with you more" is used in English to mean "We couldn't be more in agreement" or, to put it positively, "We agree with each other 100%."
