turn to 后面的 that 不是引导的从句，这里的"that" 是个代词，强调 “discovery”
“that extraordinary discovery of echo-location in bats”是名词短语，就做了 “turn ”在此的不及物动词，+ to ,的宾语。
“to see a case in which the voice plays a strictly utilitarian role.” 是宾语的补语，表目的。
“in which the voice plays a strictly utilitarian role. ”是 “case ”的定语，修饰case 。
“have to” 是情态动词，后面的“turn” 才是实意动词。

“made by animals”是 "sounds" 的后置定语，修饰sounds。

“serve”在此是谓语，“not all ”可以直接理解为“并非所有的”

这句话的主干就成了: (Not all)sounds serve as language, and we turn to discovery。
